I love these noodles and use them consistently I love these noodles and use them consistently. I also have gotten to like the “rice” the company also sells. I’m a type 1 diabetic and need to keep a strict diet free from starch to avoid sugar spikes. These noodles provide a feeling of eating rice noodles or pasta and I use them in both soups and also with sauces. It seemed sponge like to me I personally couldn’t get over the texture of the noodle. It seemed sponge like to me. They basically are flavorless so they could be used with various sauces if you can get over the texture.
