Good for those beginning to eat vegitarian-based, NOT for those of us beginning to cook. This is a comprehensive start-up guide for anyone thinking about becoming vegetarian. I was surprised, however, that some of the book reads more like a persuasive paper than a cookbook. (“Do what is best for your body by switching to a vegetarian diet.”) The quotes from Genesis, scientific studies, etc., were interesting, but I can’t imagine that anyone reading this book isn’t already “in the choir.” Meanwhile, cooking terms like “whisk” are not…
